Apple cake




Ingredients for 21cm diameter baking pan:

  • 90 g butter at room temperature
  • 160 g flour
  • 100 ml milk
  • 2 eggs
  • 130 g sugar
  • 1 heaped teaspoon baking powder
  • orange peel
  • 2 large apples
  • 1 pinch salt
  • vanilla
  • some sugar mixed with cinnamon for the final touch



The recipe is adapted upon the recipe of Ana Maria Ciolacu . For more details see the original recipe.
Beat butter with sugar and pinch of salt until it becomes frothy. 


Then add 1 egg at a time and mix well after each egg.


Add orange peel


Mix flour with baking powder and incorporate a little bit of flour alternating with little bit of milk until no more flour and milk.




Place a 24cm round parchment paper in the shape and coat its walls with butter and flour. Pour the mixture into shape and preheat oven to 180 degrees.


Peel the apples, cut them into slices, place them over the composition and sprinkle sugar mixed with cinnamon


Put mixture in oven for 50min-1hour. Do the toothpick test to check if it is ready. Powder with sugar, let it cool and then serve. It is a great dessert for the child after lunch. Good appetite!

Turkey soup with semolina dumplings


Ingredients:
  • 300g turkey breast
  • 2 eggs or 4 yolks if cooking for a child younger than 1 year
  • 7-8 tablespoons semolina
  • 1 carrot
  • 1 onion
  • 1 parsnip
  • 1 parsley root
  • 1 small celery
  • 1 red pepper
  • fresh or frozen parsley


Place the chunks of turkey breast  into a 5 liter pot and live them to simmer. Make sure to skim the top from time to time and when cooked, add the chopped vegetables.



Some people like their soup clear and therefore the vegetables are cut into large chunks to be easily removed afterwards, but I prefer my soup with vegetables and therefore I cut them into small pieces.

Add salt to taste, 2 tablespoons of oil, parsley, place a lid and let it to simmer for a while.


Meanwhile, prepare the dumplings composition. Break the 2 eggs OR 4 yolks in a bowl and stir well with a pinch of salt. This way the dumplings will be fluffy.


Add 7-8 tablespoons of semolina just to create a smooth composition. If you are not sure if the mixture is smooth enough, add a teaspoon of it into the soup and if it stays in one piece, add one more teaspoon of semolina to it.


When vegetables are almost cooked (remove a piece of carrot and check it), it's time to add the dumplings. Take one tablespoon of the composition and add it to the soup(leave it on low heat so that the dumplings stay in one piece). Repeat the process until the composition is gone.


Simmer for yet another 15 minutes with the lid on, until the dumplings are fully cooked. To verify this, remove one from the soup, cut it in 2 and if the cut is smooth and the dumpling's interior is cooked, then the soup is done. Turn the heat off, leave it to cool and serve it together your baby(blend the soup if required). Enjoy!

Chicken livers with asparagus



Ingredients:

  • 2 medium onions
  • half a red pepper
  • 500g chicken livers
  • 1 clove garlic (optional, to taste)
  • asparagus 8 to 10 pieces



Add 2 tablespoons of oil, one cup of water and the livers to a pan/wok and leave it to simmer for about 15 minutes. Stir from time to time and add some more water if needed.


After 15-20 minutes, add the vegetables, one cup of water and let simmer for about 15 minutes.


Towards the end, add the crushed garlic clove. This dish is served alone or with some polenta/potato stew side dish. Blend it for your baby and enjoy it together! The picture below is before blending the food. :)

Peas stew



Ingredients:

  • 2 medium onions
  • 1 carrot
  • 1 red pepper
  • 500g peas
  • dill (optional)
  • 2 tablespoons sweet pepper paste
  • 1 tablespoon tomato paste / mashed tomato 



Add 2 tablespoons of oil, one cup water, chopped onion, carrot and red pepper to a pot and simmer until the onion becomes soft.


Add the peas, 2 tablespoons pepper paste and just enough water to cover the peas


Place a lid on top of the pot and leave it to simmer until the peas are fully cooked


When the peas are soft, add 1 tablespoon tomato puree/mashed tomatoes and some water if needed. Leave it to simmer for another 10 minutes. When ready, take some aside and blend it for the baby. Enjoy this easy healthy meal together!

Vanilla cream cake


Ingredients for the 21cm cooking pan

The dough:
  • 4 eggs (this is for babies older than 1)
  • 120 g sugar
  • 120 g flour
  • a pinch of salt

The syrup:

  • 300ml water
  • juice and zest of a tangerine
  • 3 tablespoons honey

The filling:

  • 1 sachet vanilla pudding powder
  • 3 sachets of vanilla sugar
  • 700ml milk
  • 1 sachet whipped cream powder



For preparing  the dough, I used the recipe of Laura Adamachi. Thank you very much Laura, due to your recipe I managed to make a perfect sponge every time!


Mix well  the eggs with a pinch of salt, add sugar and after about 20 min add the flour mixture.



Place a 21cm round baking paper in the cooking pan and coat its walls with oil and flour. Pour the mixture
into the pan and place it into the preheated 175 degrees oven for about 25 minutes. When is done, take it out and leave it to cool. Meanwhile prepare the cream.


Prepare the whipped cream with 200ml of milk and the pudding with 500ml milk, according to the instructions on the packages. The filling is composed of the pudding mixed with the whipped cream, leaving some cream for decorating the cake.


To prepare the syrup, mix the juice and the zest with some warm water and honey.


Once the dough has cooled, cut it in 2 or 3. Place the first slice on a plate, add some juice, then add some of the filling. Do the same with the second slice and then decorate the cake with the remaining whipped cream.

Baked Fish with Vegetables


Ingredients:
  • salmon trout
  • asparagus
  • broccoli
  • Brussels sprouts (optional)
  • red pepper
  • tomatoes
  • 2 tablespoons olive oil
  • salt - to taste



Place some baking paper in a cooking pot, add the vegetables, the fish, 2 tablespoons olive oil and salt to taste.

Preheat oven to 220 degrees, fold the paper well and place it inside the oven for approx 30min


Serve this meal alongside your baby. Enjoy!

Boiled Donuts


Ingredients:



  • 650g cream cheese
  • 2 eggs or 4 yolks if cooking for a child younger than 1 year
  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 2 tablespoons semolina
  • 1 sachet vanilla sugar or vanilin
  • zest from one lemon and orange (optional - to taste)
  • salt


Mix the cheese in a bowl with some salt, eggs, lemon peel, orange peel and sugar


Add flour, semolina and the vanilin sugar. Stir well until smooth



Boil some water with a little salt. When boiling, lower the heat and add the donuts shaped between two tablespoons.



They are done when they float.




Remove them into a bowl to drain and cool down a bit and then serve them to the baby as they are or in combination with yogurt and a little honey(do not serve honey for a baby younger than 1).

For the adults to serve, just roll them into a mixture of breadcrumbs powdered sugar and butter and serve them with sour cream and blackberry jam or any jam you like. Enjoy!
